Vegetable Salad With Cilantro-Lime Vingrette Dressing
1/2 Orange Bell Pepper chopped
1/2 Yellow Bell Pepper chopped
1 cup Broccoli chopped
1 cup Cauliflower chopped
1-2 Medium Zucchinis cubed
3 Stalks Celery chopped
1/2 cup Red Onion Chopped
2 Carrots chopped
Optional – 1 1/2 cups cooked Orzo Pasta (for GF use Rice or for bariatric patients – do not add either pasta or rice)
Optional – add tofu, chicken, salmon to add some protein
2-3 Limes juiced
Zest from 1 Lime
1/2 cup Olive Oil
1/4 – 1/3 cup White Vinegar
2/3 bunch fresh Cilantro (wash well first)
1-2 Garlic cloves
salt and pepper
Put all ingredients in blender and blend until mostly smooth.
Pour dressing over vegetables. Best if refrigerated overnight. Serve cold.
This makes an a lot of salad. Be sure to use a very large bowl. This is great for a party or a picnic. It’s a nice light summer dish full of fresh healthy vegetables. You can use any combination of vegetables that you like. You do not have to use any or all of the ones mentioned here. Add your favorites. This is a pretty flexible recipe.
