Chicken Saag


5 chicken drumsticks (or 3-5 pieces of chicken or two chicken breasts cubed)

1 can lite coconut milk

2-3 cups frozen spinach

1 medium onion chopped

2 cloves garlic

2 Serrano chili peppers

2 stalks celery

1 tsp fresh mint

2/3 bunch of fresh cilantro

2-3 tsp curry powder

1/2 tsp red pepper flakes

salt and pepper to taste

In pan, saute onions, garlic, and celery.  Once soft, add mint, chili peppers, and cilantro.  Then add curry powder and pepper flakes.  Saute a few more minutes.  Then add frozen spinach.  Once spinach is cooked, add 1 can coconut milk and stir.  Then add chicken pieces.  Bring mixture to boil and lower heat to low temperature.  Cover and simmer for one hour stirring occasionally.

Can be served with rice or bread.
