OK, I know that sound profane, but stay with me here for a minute and you’ll understand…
I totally stole this recipe from a co-worker because it is delicious. This is just a poor-woman’s rotisserie chicken recipe. Here is what you need:
1 glass (tumbler)
1 whole chicken
Any spices you like.
This is the spice combo that I like best.
1-2 cloves garlic
1/2 tsp (or more) of ground/rubbed sage
1-2 tbsp olive oil
1-2 tbsp apple cider vinegar
salt & pepper
dash of soy sauce (can be GF soy sauce or left out entirely to make this recipe GF)
dash of sesame oil
Combine spices/oil and rub all over outside of chicken.
I also put 1/2 onion, 1-2 cloves garlic, 1/2 lemon inside chicken. Then put tumbler inside chicken open side down. Stand chicken up on glass in baking dish. 9×9 is OK, but you can use a bigger one if you like.
It’s a similar concept to beer-can chicken, but without the beer can.
Cook for two hours at 450. The outside should be nice and crispy and the inside very tender and juicy.
Be careful removing from baking dish. You can strain the juices and make a sauce from them as well. Otherwise, just slice and eat.
