Gluten Free, Sugar Free Pumpkin Oatmeal Brownies With Cream Cheese Frosting


This is a recipe that I created myself.  I had to make it three times adjusting the recipe a bit here and there until I got it right.  The third time was definitely the charm.  I invented this recipe for three reasons.

1. I have been dying to eat a pumpkin flavored dessert since the fall started, and all of the coffee shops and restaurants began peddling their pumpkin flavored treats.

2. I cannot eat said treats laden with sugar, so I needed a viable sugar-free or low sugar option.

3. My sister has Celiac Disease and cannot have anything with gluten.

I spent a lot of time reading cookie, brownie, and pumpkin bread recipes and I cobbled together what I thought would be a good sugar-free, gluten-free alternative.

Here is what you will need:

1 9×13 pan

2 large mixing bowls

1 hand mixer

1 spatula

1 large spoon

Ingredients for the pumpkin brownies:

1 15oz can of pumpkin

2 eggs

2 sticks of butter softened

1/2 can condensed milk

1 cup apple sauce (the natural kind with no sugar)

2/3 cup honey

1 teaspoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon ginger

1 teaspoon allspice

dash of salt (optional)

1 1/2 cups gluten-free flour (I used Red Mill)

2 cups gluten-free oatmeal (I used Red Mill)

Grease 9×13 pan bottom and sides.  Preheat oven to 375.

Combine eggs, butter, apple sauce, honey, condensed milk, and spice in large mixing bowl.  Stir together and then mix with a hand mixer until smooth.

In medium bowl combine flour, salt, and oatmeal.  Once the dry ingredients are mixed together, add to the larger bowl of the wet ingredients.  Stir together with a large spoon until mixed well.

Pour into 9×13 pan and cook in preheated oven for 25-30 minutes, or until a toothpick comes out dry.  Do not overcook.  Remove from oven and cool completely before frosting.

Ingredients for cream cheese frosting:

1 8oz package of cream cheese softened

1 stick butter softened

2 teaspoons vanilla

1/4 cup honey

In a medium bowl, stir ingredients together and then blend with a hand mixer. Spread over brownies.

This makes about 60 1 inch brownies and with the frosting they have about 105 calories each.  I added the recipe to to come up with that calculation.

I made them for Thanksgiving, and everybody loved them.

Other suggestions for this:

Add walnuts

Add chocolate chips

Add sliced apples

I think the possibilities are endless.  Enjoy!!
