This is a one-pot recipe. Since I’m not supposed to eat and drink at the same time, I cannot really eat it anymore, but I really love this dish, so I had to post it.
1 – medium sauce pan
1 – 1 1/2 pounds beef strips
2 tablespoons olive oil
1-2 cloves garlic
salt and pepper
1/2 tsp ground sage
1 small onion (chopped)
2 stalks celery (chopped)
2 carrots (chopped)
2-3 small potatoes (cubed)
1 cup green beans (frozen are OK)
1 cup any kind of flour. You can use gluten-free flour or gluten-free Bisquick works well.
1 box beef broth (roughly 2 cups)
Coat beef strips with flour and saute them in tablespoon of olive oil, 1-2 cloves of garlic, and ground sage. Add salt and pepper. Once the beef is just brown on the outside remove from pot. Add a little more olive oil. Then add carrots, celery, onion, stir often. Once they are soft, stir in potatoes, green beans, and add beef back into pot. Add box of beef broth and stir well. Bring to boil. Lower heat, cover, and simmer for 30-45 minutes.
